Corn Ribs Recipe

  1. Pre-heat the oven to 425°F Place parchment paper on the bottom of a baking pan.
  2. Mix the brown sugar, garlic powder and salt in a small bowl. Set aside.
  3. Use a sharp knife to carefully cut the corn ears in half lengthwise. (See Cook's Note). Cut each half in half lengthwise to create 4 equal pieces. Each one should be brushed with olive oil. Season the corn with the spice mixture. Place on the baking sheet.
  4. Bake for 18 to 20 minutes or until corn is well charred. The corn should curl like ribs.
  5. Make the mustard mayo while the ribs are baking. In a small bowl, combine the mayonnaise and BBQ sauce with the honey. Set aside.
  6. After removing the ribs from oven, brush them with some of the sauce. Transfer the corn ribs onto a plate. Serve the corn ribs on a platter with the fried onions and green onions.
  7. Cook's Note
  8. Corn ears are hard in the middle and can be difficult for you to cut into quarters or halves. You should ensure that an adult is present, and that you have a sharp knife.
