Spanish Potato Omelet

There's not really extravagant about this rural Spanish style omelet, simply loads of generous goodness from firm broiled potatoes and onions. Cleaved tomatoes and green onions loan significantly more flavor and variety.

  1. In a huge griddle or skillet, heat olive oil over medium-high intensity. Sprinkle potatoes delicately with salt and pepper. Cook until brilliant brown and fresh.
  2. When the potatoes are brilliant, mix in the onions. Cook, blending every so often, until onions relax and start to brown.
  3. In the interim, beat eggs along with salt and pepper. Empty eggs into dish and mix tenderly to join. Decrease intensity to low and cook until eggs start to brown on the base.
  4. Release lower part of omelet with a spatula, rearrange an enormous plate over the dish, and cautiously turn the omelet out onto it. Slide the omelet back into the dish with the uncooked side down. Cook until eggs are set. Embellish omelet with tomato and green onion and serve warm.
