Olive oil can be added to a large, heavy-bottomed saucepan over medium heat. Heat for about 1 minute. Cook the onions, celery and carrots until tender. Cook for 2 minutes more. Add ginger and garlic. Stir in curry and garam masala, and cook until fragrant.
Stir in the vegetable stock, coconut milk, and salt. Continue to stir until the coconut milk is fully incorporated. Add the remaining vegetables and herbs. Let simmer for 25 minutes. Season with salt and pepper as necessary. Serve with flat bread and green onions or cilantro.
